I love looking up recipes online and save them thinking they will be be great. More often than not, I'm disappointed. As a result, I thought I would share recipes I've found, altered or completely made up that my family really enjoys.

Serves 4; Per serving – Cal 170; Carbs 4 Fat 6 Pro 24
2 tbsp flour
½ tsp salt
1 lb boneless skinless chicken breast
2 tsp olive oil
½ cup chicken broth
3 tbsp lemon juice
1 tbsp capers
1 tsp butter
2 tbsp parsley
Mix together flour and salt in pie plate. Dip chicken in mixture, shaking off excess.
Heat oil in large skillet on medium high heat. Add chicken and cook until no longer pink in center; transfer to plate.
Add broth, lemon juice and capers to skillet. Bring to boil over medium heat. Reduce heat and simmer until slightly reduced (about 2 minutes).
Return chicken to skillet until heated through (turning to coat).
Transfer chicken to plate. Remove skillet from heat; add butter and parsley. Pour over chicken.
